Even my kids who want to hate brussels sprouts love these! Preheat oven to 400 degrees. Cut brown ends off of the brussels sprouts and take off the yellowish outer layers. Rinse and then mix in a bowl with 3 tablespoons olive oil, 3/4 teaspoon salt, and 1/2 teaspoon black pepper. Lay them out on top of pan covered with parchment paper and roast for 35 minutes. Chickpea Pasta
I love Barilla and Banza Chickpea pasta. It’s delicious and I love all that extra protein and the extra healthy nutrients. Today I made chickpea pasta with some tomato sauce, broccoli and cheddar cheese. Yum.
Quinoa with Peas and Feta
This dish is easy to make and a big people pleaser. You can either have it as a light entree or as a side dish.

I use water instead of chicken broth to keep it vegetarian for myself, and my husband and I have found we prefer it without the lemon juice. Also, I find it easier to use 2 cups of peas that I cooked that were frozen.

Broccoli Cheddar Soup
I’ve always loved the Broccoli Cheddar Soup at Panera, so I was so excited to find this recipe to make it from scratch!

My review? This recipe is spot on. It tasted exactly like the Panera soup to me – just as delicious. (I used veggie broth instead of chicken broth) However, when actually seeing the ingredients that go into this soup, I didn’t feel that great about it. It’s largely cheese, half and half and broccoli.
So while this is great if the Panera soup is what you’re looking for, I’m going to hunt for a recipe that has some more nutrition in it – maybe more veggies – and maybe less half and half. Stay tuned for a healthier alternative.
